Sliced WILD BOAR with Gherkins

1½ - 2lb haunch or fillet of wild boar           
Parsley
Cooked red wine marinade           
Chives
2 tbsp. light French mustard           
Chervil
4 tbsp. butter           
Salt and pepper
½ clove garlic           
3 or 4 gherkins, sliced
2 shallots, chopped           
1 tsp. lemon juice

1. Cut the meat into slices of about ¾ inch thick and marinate for a day. Drain, dry and spread lightly with mustard.

2. Heat 2 tbsp. of butter in a frying pan, brown the wild boar on both sides and place the slices on a dish to keep hot. Put the rest of the butter, shallots, herbs, gherkins and lemon juice into the pan and season. Cook gently for a few minutes, then pour over the meat and serve.

Cooked Marinade

2 or 3 tbsp. oil           
1 or 2 cloves of garlic
½ - 1 glass of wine vinegar           
Parsley
3 or 4 glasses of red or dry white wine           
Thyme
A little water, if the vinegar is very strong           
Peppercorns
Some brandy or spirits, if desired           
2 cloves
1 onion 2 shallots
1 carrot                       
2 celery stalks
1 bay leaf
according to taste: coriander seeds, juniper berries, rosemary, basil, wild thyme, oregano, orange lemon peel

1. Sauté the herbs and flavouring in the oil. Add the liquids and simmer for ¼ - ½ hour.

2. Let the mixture cool before pouring it over the meat.
