Chilled Roast Boar Fillet with Curry & Mango Chutney
Serves 4 (or 8 appetisers)
2 lbs (1 kg) fillet of boar, trimmed & boned
3 cloves garlic, crushed
1 oz (25g) curry powder
2 cloves, crushed and chopped
Oil
Seasoning
Prepared mango chutney
1. Rub the fillet with the curry, garlic, cloves and seasoning. Then rub with oil. Allow to stand for 1 hour.
2 Roast in a moderate oven (1900C/3750F/ gas 4-5) until done, approximately 1-1¼ hours. Remove the meat from the tray and allow to cool.
3 Slice the meat thinly and serve with mango chutney.
