Tuscan Beans with WILD BOAR Sausages
Serves 4

2 large cloves garlic, finely chopped
salt and freshly-ground black pepper
1 onion, finely chopped
2 tsp. (10ml) tomato puree
3 tbsp. extra virgin olive oil
1 lb (450g) wild boar sausages
1 lb (450g) cannelloni beans, cooked
5-6 leaves of fresh sage
2 tins chopped tomatoes in natural juice

1. Gently fry the garlic, onion and sage in the oil until the garlic is golden. Add the beans and season well. Pour in the tomatoes, stir well and cook for a few moments before adding the tomato puree. Simmer gently for 15-20 minutes, stirring occasionally.

2. Whilst the beans are cooking, grill the sausages until brown and cooked through. Either cut the sausages into chunks and add to the beans a few minutes before serving or serve separately.
