Cooking recommendations:
Our lamb shank marinated in mint should be slow roasted or pot roasted in the oven for over 1.5 hours with added water. You may have in the tray root vegetables such as carrots potatoes and onions. If you cook slower and longer, the tastes will be infused and you will get a really tender tasty meal.
Lakeland lamb chops can be cooked at first nice and slowly either fried or grilled for 10 minutes each side and then, after a little basting, fried off 1 minute each side on higher heat. Serve with rice, vegetable or summer salad.
Lamb Henry is a bone-in-shoulder of lamb marinated in a mint and rosemary marinade.
Ideal for a long slow pot roast with root vegetables such as carrots, potatoes and onions.
Cook for 1.5-2 hours with added water at 1800C. A final baste of the meat and vegetables, and removal of the lid for 5 minutes, roast off in the oven or under the grill, add even more taste
Pork steaks can be fried or grilled with seasoning (salt, pepper) etc’ of your choice.
If they are very lean, a little olive oil will be necessary to aid cooking
Wild Boar mince is often used in European countries like Italy and Spain to enhance pasta, spaghetti, risotto, paella and carbonara. Or a good old fashioned mince, onions and potatoes style English supper. Sometimes a Cumberland Shepard’s Pie.
Because of the lean nature of the meat, bacon fat, lard or olive oil will help to improve the flavour
Wild boar burgers are fantastic for the summer BBQ or a rainy day cook in the pan. Olive oil, 3-4 minutes either side.

Don’t be frightened of using them on the BBQ (should the weather permit). Season as you like.
